In the Organic Spirit

Keeping things local, organic and sustainable is important to us here at L’Auberge Del Mar. From using local produce and exclusively sustainable seafood at KITCHEN 1540 to using fresh grown herbs from our very own garden located on property, these offerings have been a big hit with our guests. In keeping with the spirit that being organic brings to the hotel, we bring to you our newest organic cocktails.

We had our bartender Quinn mix up our Farm to Glass martini to show us a great example of organic spirits in action.

We want you to experience why being fresh, innovative and organic is more than just delicious, it can also be a whole lot of fun.

The process actually starts two days before with the creation of the falernum (a sweet syrup handcrafted on property). This delicious ingredient takes the zest of 30 limes, cloves and two days to macerate and…well, we can’t give away all the secrets!

Quinn then grabs fresh bronze fennel from our herb garden to muddle and use as a garnish for the drink.

With a splash of lemon juice, organic Tru Vodka and a bit of lemon zest you are going to be in the best of organic spirits…and ready for a sit down at KITCHEN 1540.

Quinn recommends the Hamachi with compressed watermelon, lemon jam, bottarga, quinoa and thai basil as a pairing to this delightful drink. Want to know more? Well you will just have to pay us a visit!
