Keeping the Menu Fresh

KITCHEN 1540’S COMMITMENT TO KEEP THINGS FRESH, in both ingredients and ideas, creates the right mix of complex flavors and a cool ambiance to keep the house packed night after night. Latest development: the announcement of new executive chef Scott Thomas Dolbee.

“Finding a chef to build on the acclaimed reputation of KITCHEN 1540 was a task we embraced with fervor and determination,” said Michael Slosser, vice president and managing director of L’Auberge Del Mar. “We sought the one individual who we knew would use their talents to continue the evolution of KITCHEN 1540 – we found those skills, and more, in Scott.” 

Scott is creating an entirely original menu with cuisine that remains approachable and fun despite the sophisticated technique and masterful execution. If you’re looking to embark on a culinary adventure, be sure to check out his new menu set to debut in April. This newest incarnation of KITCHEN 1540’s modern American cuisine features fresh produce, bold flavors and, most notably, a playful attitude. Dishes will include hand-grown micro greens from the chef’s hydroponic garden.

 “I’m thrilled to return to Southern California, and especially to a property that has such great culinary momentum as L’Auberge,” said Dolbee. “I love utilizing all styles of cooking and draw inspiration from the freshest ingredients and global culinary influences.”

Just as the menu is sure to offer variety, so does the space. The open kitchen and the dining room’s seamless flow means you can start at the wine bar, make your way to a table, and end the night on the patio strung with hanging lanterns. Here you’ll find an outdoor lounge anchored by a fire pit perfect for a nightcap. For something a little more private, cabanas line the patio and offer a secluded space for conversation.
