We’re keeping things fresh in the KITCHEN at L’Auberge Del Mar, sourcing the finest local ingredients for our menu. Chef Jon Bautista crafts each dish with colorful regional produce and an artful eye. If you haven’t been by KITCHEN 1540 in a while, come for the Halibut! Mild in flavor, low in fat, and known its tender yet firm texture, this fish is harvested locally off the coast of Southern California and has become a favorite with our guests. Halibut can be prepared in a variety of ways, allowing our culinary team to be creative and keep with the season.
