It's great to see the beautiful weather returning to sunny San Diego, and along with it, the long awaited rebirth of L'Auberge Del Mar opening in less than two months.

Things continue to rapidly progress for our renovation. We are on schedule and the transformation has been incredible to watch. What fascinates me the most is how the smallest details can really bring the whole experience together, making this magical change come to life.

Renovation Update

Each day, we are making giant strides towards completing our $25 million renovation. The resort has received its new and improved exterior finish, bringing on the "wow" factor for all who pass by. Within the next few weeks, we will be filling our beautiful new pool, painting the bright new lobby and installing new NanaWall doors which will provide a beautiful, unobstructed view of the ocean from the lobby.

Executive Chef McCabe's Epicurean Corner

L'Auberge Del Mar's award winning Executive Chef Paul McCabe is busy working on menu items for the resort's new, soon-to-be-named restaurant. Slated to open in September 2008, the signature restaurant will combine world-class dining with a spirited atmosphere, offering guests the choice of dining under the stars or in a sleek and modern dining room. Showcasing local farmers, sustainable seafood and hormone-free meats, the menu will be market and farm driven - constantly changing with the seasons. Specific dishes for the new concept will include Fig and Cabrales Bleu Cheese Salad with Serrano Ham and Minus 8 Vinegar, Grilled Octopus with Organic Tomatoes and Grilled Meyer Lemon, and Braised Kobe Beef Short Ribs with Roasted Chino Farms Turnips and Chanterelles.

Always on the forefront of culinary trends, Chef McCabe will be presenting innovation at its finest with the new restaurant and banquet options.
