DINING PERFECTION: NEW WEDDING MENUS AT L'AUBERGE DEL MAR

One of So Cal's Most Sought-After Wedding Locations Announces New Wedding Menu Packages

Designed by Executive Chef Paul McCabe and Executive Sous Chef Jesse Bajana, the new wedding menus are created from the freshest ingredients in Southern California and offer a wide variety of choices, culinary influences and exciting flavors. With a range of costs and options, these menus match any budget and are sure to please.

Delicious yet unpretentious, the Ocean Song Menu provides first course options including mixed California field greens with sliced tomatoes, carrot curls and cucumbers and a choice of balsamic vinaigrette or creamy champagne dressing; or a traditional Caesar salad with herbed croutons and parmesan cheese. Ocean Song entree selections include pan-seared Mahi Mahi accompanied by a warm shrimp and scallop salsa, served with a lemongrass beurre blanc sauce and herbed wild rice; garlic rubbed pork tenderloin with herb roasted new potatoes and a port reduction; organic Scottish salmon with a lentil vinaigrette, vegetable melange and a radish salad; or oven roasted breast of chicken with garlic mashed potatoes and a rosemary-Dijon sauce. To complete the Ocean Song feast, dessert options will include a choice of chocolate dipped strawberries; chilled sorbet or gelato; or a seasonal fruit crisp. The cost for the Ocean Song Menu option is $140 per person, plus tax.

The Pacific Dream Menu offers a variety of light salads to start off the evening, including mixed greens with caramelized walnuts, tomatoes, cucumbers and carrots with a basil shallot vinaigrette; or baby spinach salad with mushrooms, pine nuts, carrots in an Asian poppy seed vinaigrette. Noteworthy entrees include pesto crusted sea bass, served with wild rice and a red pepper coulis; grilled filet of beef with potatoes dauphinoise and a peppercorn armagnac sauce; or chicken with prawns and tropical fruit salsa, served with lemongrass jasmine rice and a champagne beurre blanc sauce. Simple desserts complete the meal, including chocolate dipped strawberries; individual chocolate souffle cakes with sauce anglaise; or chilled sorbet or gelato. The Pacific Dream Menu starts at $150 per person, plus tax.

Leading off with a Chef's selection of amuse bouche, the Seaside Paradise Menu features decadent first courses such as lobster cappuccino, with fresh lobster and tarragon foam; baby greens with toasted pine nuts, dried cranberries, organic goat cheese and an aged sherry vinaigrette; or seared diver scallops with a caramelized onion risotto, wild mushrooms and a Madeira reduction. Divine entree options include rack of Colorado lamb with goat cheese gratin and a spiced pepper jam; sauteed John Dory with fennel, artichoke and preserved lemon in a saffron mussel jus; or grilled petite fillet with whole grain mustard sauce and pesto crusted sea bass with sweet pepper coulis and garlic mashed potatoes. Delectable dessert choices with the Seaside Paradise Menu include chocolate dipped strawberries; raspberry creme brulee with white chocolate curls; or chilled sorbet or gelato. Prices for the Seaside Paradise Menu start at $165 per person, plus tax.

With L'Auberge Del Mar's Sunset Soire Menu, diners receive four exquisite courses. First course choices are Dungeness crab with shaved Basque cheese, petite arugula and green peppercorn vinaigrette, or a Tuscan white bean soup with wild mushroom ravioli, truffles and fried leeks. For the second course, options include mixed greens with caramelized walnuts, tomatoes, cucumbers and carrots with basil shallot vinaigrette or baby spinach salad with mushrooms, pine nuts, carrots and Asian poppy seed vinaigrette. Over-the-top entre selections are petite filet mignon with wild mushroom sauce and a rock lobster tail with a roasted red pepper coulis and red rose potatoes, or grilled veal chop in a truffle, Madeira reduction and jumbo white prawns in a caviar beurre blanc sauce, accompanied by a wild mushroom risotto cake. As with every other package option, dessert options are always fantastic with the Sunset Soire Menu offering a sampler with vanilla creme brule, a chocolate dipped strawberry and chocolate souffle cake, or a tasting of house-made chocolate truffles. The price for the four-course Sunset Soire is $175 per person, plus tax.

The Coastal Dinner Buffet exceeds expectations with a variety of dishes, ranging from classic and simple, to luxurious and ornate. With soups like California cioppino, a cheese-and-meat antipasto, a light salad, as well as entrees such as roasted Australian lobster tail, a filet mignon carving station and various delightful accompaniments, the Coastal Dinner Buffet sets a new standard for wedding buffets. The Coastal Dinner Buffet starts at $190 per person, plus tax.

For each of the menus listed above, couples select one salad, up to two entrees and one dessert. Hosted bar service is provided for one hour for every wedding and includes select liquor, beer, wine and soft drinks. A choice of three delightful butler-passed hors d?oeuvres are included in every wedding reception, offering options such as goat cheese crostini with sun-dried tomato; artichoke beignet with lemon oregano aioli; shrimp escabeche with pickled onion and avocado; beef carpaccio with virgin olive oil and onion marmalade, and many more. Each wedding guest is also offered a complimentary glass of wine for dinner and champagne for the wedding toast. Beyond the options available, L'Auberge Del Mar can also produce a customized menu to suit the needs of even the most discerning couple.
