New Executive Chef Scott Thomas Dolbee Celebrates New Beginnings with His First Easter Menu

Ditch the bunny and egg-hunting mayhem and celebrate Easter in style at L’Auberge Del Mar. Under the leadership of new Executive Chef Scott Thomas Dolbee, the hotel’s annual Easter brunch on Sunday, April 8 will combine coastal breezes, friendly service and a delicious menu prepared with signature L’Auberge flair. Diners have the choice of a buffet-style brunch at the ocean view Waterfall Terrace or an à la carte brunch menu at the stylish KITCHEN 1540 restaurant. 

“As new Executive Chef, I’ve been given the opportunity to evaluate our entire culinary operation and provide new opportunities for dining and celebration at the property,” said Chef Dolbee.

Waterfall Terrace Brunch
At the Waterfall Terrace, the buffet menu includes a selection of traditional stations from fresh juices and pastries to omelets, salads and waffles. Also featured is a carving station with maple glazed ham, crab-stuffed rock fish and roasted leg of lamb, as well as a cold seafood buffet with popular delicacies such as oysters on the half shell, salmon pastrami and ahi tuna tataki. Adding a bit of the unexpected to the menu is a “street food” station where guests can opt for tacos, sliders, and biscuits and gravy. Guests will feel like a kid again at the dessert station serving fun selections such as funnel cakes, brownie pops, churros and cupcakes.

Waterfall Terrace Brunch is offered from 10 a.m. to 3 p.m. on Sunday, April 8. Brunch is priced at $65 per adult and $32.50 for kids 12 and under. Reservations are highly recommended and can be made at 858-793-6460.

KITCHEN 1540
At KITCHEN 1540, the à la carte Easter Brunch menu is equally as creative and satisfying. Savory selections include Lobster Benedict, Spring Salmon Hash and Eggs, and Morel Mushroom Omelet. Those with a sweet tooth can indulge in favorites such as Almond Crusted French Toast and Lemon Ricotta Pancakes. The menu also offers more traditional lunch fare including Cornish Game Hen, Copper River Steelhead, Niman Ranch Cheeseburger and a selection of gourmet salads.

KITCHEN 1540’s Easter Brunch menu is offered from 6:30 a.m. to 2:30 p.m. on Sunday, April 8. Reservations are highly recommended and can be made at 858-793-6460.
