New menu is fun and interactive with retro vibe

L’Auberge Del Mar’s Executive Chef Scott Dolbee has been playing in the kitchen again. In April, he unveiled his highly praised new menu at KITCHEN 1540, the hotel’s award-winning signature restaurant. For his second act, Dolbee has reinvented the menu at the property’s ocean view Waterfall Terrace.

The new menu at Waterfall Terrace reflects the venue’s relaxed, seaside atmosphere, as well as its hip and modern vibe. Described by Dolbee as “playful, fun and adventurous with retro influences,” the menu showcases modern versions of classic lunch dishes, as well as invites guests to participate in their dining experience. Both the hot dog and hamburger make a comeback on the menu, but are far from ordinary. Dolbee’s “Fat Dog” consists of a Kobe beef hot dog wrapped in house-made bacon and placed on an Artisan pizza crust bun. The Kobe beef “Bling Burger” is topped with a truffle, bacon, friend eggs, fried onion and tomato jam.

Other menu items are interactive, allowing guests an opportunity to build their own dishes from a selection of items on the side such as sauces and garnishes. One noteworthy example is the fish fry, where diners choose from four fish selections, four dips and four styles of “chips”. The chopped salad offers similar customization with a choice of lettuce, toppings and salad dressings.

“For me, cooking is great fun and collaborative, and the new Waterfall Terrace menu reflects that,” said Dolbee. “The approach I take with my team is that there are no rules, only infinite possibilities. The result is new concepts and dishes that mature over time and provide a truly memorable guest experience.”

A few highlights of the new Waterfall Terrace menu include:

- Ahi Tuna ‘Tower’- Avocado, Roasted Tomato, Spicy Soy ($16)
- Grilled Seafood Salad- Lobster, Shrimp, Scallops, Tomato, Hearts of Palm, Parmesan Chive Dressing, Brioche Croutons ($23)
- Roasted Mushroom Flatbread with Gruyere, Truffle Cream, Cipolini Onion ($16)
- Bling Burger made with Kobe Beef, Truffle, Bacon, Fried Egg, Fried Onions, Tomato Jam ($18)
- Ahi TunaSandwich-Grilled Rare, Shiitake Mushroom, Pickled Onion, Arugula, Sambal Aioli ($18)
- Hot Pastrami- GrilledRye, Homemade Potato Chips, Heirloom Tomato Salad ($16)
- Fat Dog- Bacon Wrapped Dog, Truffle Mayo, Pico De Gallo, Lettuce, Pizza Bun ($16)

Located off the main lobby, Waterfall Terrace is a comfortable, relaxed outdoor restaurant offering a peaceful ocean view setting. The restaurant serves breakfast, lunch and dinner and is open from 8:00 a.m. to 10:00 p.m.

About Scott Thomas Dolbee
Dolbee joined L’Auberge in February 2012 from Four Seasons Resort Whistler. Executive Chef since 2008, Dolbee helped Four Seasons Whistler earn Canada’s only Five Diamond distinction and was an integral part in the concept, design and launch of the property’s popular SIDECUT restaurant. Dolbee also managed the resort’s culinary operations during the 2010 Winter Olympics and Paralympics in Whistler, as well as partnered with First Nation’s to develop an indigenous-inspired menu for the nearby Squamish Lil’Wat Cultural Center.

A graduate of San Dieguito High School in Encinitas, Dolbee started his culinary career at age 18 as a chef tournant for the Ritz-Carlton Laguna Niguel in Laguna Beach. His progression included positions in kitchens around the country from the prestigious Jonathan Club in Los Angeles and Manele Bay Hotel in Hawaii, to Wauwinet Inn in Nantucket and The Sagamore Resort inNew York. In 2001, Dolbee joined one of OrangeCounty’s top free-standing restaurants, Pinot Provence, as sous chef working under famed culinary master Joaquim Splichel, then went on to earn enthusiastic reviews as Executive Chef of French 75 restaurant in Laguna Beach. In 2004, Dolbee returned to the hotel industry and successfully launched the Four Seasons Beverly Wilshire’s acclaimed The Blvd restaurant as chef de cuisine.
