DEL MAR, CA - L’Auberge Del Mar’s signature restaurant KITCHEN 1540, is readying for its second incarnation where its progressive culinary vision will be unveiled.  One of the most interesting aspects of the new plan is the White Flag Menu, a play on a tasting menu for guests who trust the kitchen and want the culinary team to custom design an exciting meal for them.

There’s no written menu; rather each server gathers information from the guests--if they are looking for opulent ingredients like foie gras and caviar; or if there are any dietary restrictions or food preferences—and then the kitchen builds a completely spontaneous menu.

It is called the White Flag Menu because the kitchen will keep sending out food perfectly paired with cocktails, beer and wine, until guests are completely satisfied and "wave the white flag," then desserts courses are sent out.  There are interesting new flavor profiles on the menu that use hand-grown micro greens from KITCHEN 1540’s hydroponic garden where they are also the first to grow micro root vegetables and fruits.  The new menu features unique proteins from small purveyors – think pig tail, cuttlefish and rabbit instead of steak, salmon and chicken.
