CHRISTMAS DINNER MENU AT KITCHEN 1540 INSPIRED BY NOSTALIGIA, SUSTAINABILITY AND PROGRESSIVE TECHNIQUE

Del Mar, Calif.-  L’Auberge Del Mar’s KITCHEN 1540 will offer a special Christmas dinner menu inspired by the principals of sustainability and presented in Chef Scott Dolbee’s signature playful style. Classic holiday flavors combine with local, seasonal ingredients in a menu that is progressive, festive and inviting.

“We wanted to create a menu that was exciting and memorable, but also evoked a sense of nostalgia for our guests,” says Chef Dolbee. “Guests will identify with flavors of holidays past, but enjoy them in thrilling new combinations and presentations.”

KITCHEN 1540’S three course holiday menu will be offered on both Christmas Eve and Christmas Day. Reservations are strongly recommended and can be made at 858-793-6460

Scallops with winter squash variation, sweetbread ‘bacon’, tonics, Alba white truffle

Cool Roasted Beets with frommage blanc, Sausalito watercress, yuzu

Charred Rare Ahi with blood orange, pistachio brittle, arugula

Chestnut Soup with crab apple, bacon, pumpkinTERSENTREES

Turkey with local lobster, artichoke, leek, mussel, Meyer lemon broth

Wild Boar with black mole, apple, parsley root, charcoal, white chocolate, chili nut, granola

Cornish Game Hen with white bean, chorizo, creamed spinach, 62˚ egg, chickpea hummus, tomato preserve

Steelhead with hot smoke, collard greens, black eyed peas, romesco, ham hock

California Lamb with curried carrot, yogurt, mango chutney, tamarind, papadum, puffed rice

The inviting wine bar, with 24-bottle Cruvinet, doubles as a dining counter providing an intriguing glimpse into the energy and excitement of the open kitchen activity, while the private dining room wrapped in wine-encased walls provides a quieter, more intimate setting. The spacious outdoor patio allows guests to enjoy the ocean breezes and features private cabanas for intimate dining.
