A tasting menu of custom-designed dishes served until guests “raise the white flag” in surrender

DEL MAR, CA – Guests of KITCHEN 1540 have only one decision to make when they select the White Flag menu – and that is when to surrender. Throughout the meal, guests place themselves in the hands of the chef who commences to create a custom tasting menu that is served until the white flag is raised.

“Our guests have great confidence in the culinary talents at KITCHEN 1540 and delight in placing themselves, and their evening, in the hands of our creative team, trusting that it will be an exciting, culinary adventure,” explained Scott Thomas Dolbee, executive chef.

There is no written menu; rather each server gathers information from the guests--if they are looking for opulent ingredients like foie gras and caviar; or if there are any dietary restrictions or food preferences—and then the kitchen builds a completely spontaneous menu. Guests can set their price range as well.

The program is aptly called the White Flag Menu because the kitchen will keep sending out food perfectly paired with cocktails, beer and wine, until guests are completely satisfied and "wave the white flag.” Of course, the white flag doesn’t mean complete surrender. Dessert courses follow for anyone who still has room!

 The White Flag menu is offered nightly and many of the dishes will include hand-grown micro greens from the chef’s hydroponic garden.
