Executive Chef Nathan Lingle will celebrate his first holiday season at the resort with memorably delicious Thanksgiving and Christmas menus at KITCHEN 1540, Coastline and Bleu Bar. A Naughty & Nice Hot Cocoa Station is popping up on weekends at Bleu Bar, Santa will be at the annual Tree Lighting and the resort’s popular L’Tea by the Sea will serve delectable afternoon treats amidst ocean views. Three resort venues will each feature “12 Days of Christmas” rotating daily specials – Champagne & Oyster Pairings at Coastline, Holiday Cookies in KITCHEN 1540 and Pampering offerings at the Spa.
Thanksgiving Three-Course Dinner at KITCHEN 1540 Thursday, November 26, from 3 to 9 p.m. The deliciousness for this holiday repast begins with a choice of starters including Sierra Gold Bellini (salmon gravlax, caviar, quail eggs), Blue Hubbard Squash Bisque, Crisp Cauliflower, Rainbow Chard or Lamb Ragout. Entrée options are Heritage Turkey, Skuna Bay Salmon, Beef Tenderloin or Smoked Eggplant Tortellini – all with accompaniments. The Sweets course offers Apple Cake Tatin, Goat Cheese Cake with Pumpkin Butter or Dark Chocolate Cranberry Torte. $79 for adults; $39 for children under 12, plus tax and 20% gratuity.
“Santa by the Sea” Del Mar Tree Lighting in L’Auberge Del Mar’s Amphitheater:
Sunday, December 6, from 3 to 6 p.m.; Tree lighting at 5 p.m. This annual Del Mar Village Association event delights families with a dazzling tree lighting ceremony, pictures with Santa, carolers and local vendors selling their wares. Executive Chef Nathan Lingle will be serving Mulled Cider with Holiday Cake Pops and Squash Soup Shooters. Complimentary admission.
Naughty & Nice Hot Cocoa Station:
A Weekend Pop-Up at Bleu Bar Every Friday, Saturday and Sunday beginning November 27 through December 27 from 3 to 7 p.m. This Christmas holiday pop-up station offers a warming selection of hot chocolates including Classic, Mexican Spice, Mocha and Peppermint, topped with choice of flavorful marshmallows such as Vanilla Bean, Cocoa, Peppermint or Orange Blossom. Naughty Options for grown-ups include warming quaffs such as Kahlua, Grand Marnier, Frangelico or Baileys Irish Cream, along with cocoa selection and topping. Other drink toppings include whipped cream, white chocolate curls, rainbow jimmies and crushed candy canes. $14 for Naughty; $8 for Nice.
L’Tea by the Sea Served in the Oceanview Lobby Living Room:
Every Saturday and Sunday in December; Thanksgiving Thursday, November 26; Christmas Eve Thursday, December 24; Christmas Day Friday, December 25; and New Year’s Eve Thursday, December 31, at noon and 2 p.m. Stylish tea service with delectable bites including Blue Cheese Popover, Tuna Nicoise Blini and Cucumber Banh Mi, along with desserts like Cinnamon Scone, Goat’s Milk Shortbread and Chocolate Pomegranate Tart will be offered $39 per person; $49 with Champagne, exclusive of tax and gratuity. Saturday, December 19, through Wednesday, December 30 Three venues at L’Auberge will each feature a special themed offering every day for these 12 Days. At Coastline, known for its bubbles, bites and brews, there will be 12 daily rotating Champagne and Oyster pairings offered. At KITCHEN 1540, rotating holiday cookies will be a sweet draw for 12 nights. And the Spa will highlight 12 days of rotating Pampering specials.

Thursday, December 24, and Friday, December 25, from 5 to 10 p.m. It’s Executive Chef Nathan Lingle’s first holiday season at the resort, so he has created a Christmas menu to impress, featuring Starters such as King Crab with celery root and quince and Beef Carpaccio with bone marrow custard. For the Second Course, guests are offered choices including Grilled Swordfish, Suckling Pig and Goose Cannelloni, all with accompaniments. Sweets tempt with Pear and Pistachio Tart, Egg Nog Cheesecake and Chocolate Yule Log. $89 for adults; $39 for children under 12, plus tax and 20% gratuity.
