L’AUBERGE DEL MAR CELEBRATES THANKSGIVING WITH MOUTHWATERING MENU AND FALL-INSPIRED SPA TREATMENTS

KITCHEN 1540’s Executive Chef Brandon Fortune has created a modern Thanksgiving menu with a Southern twist that offers diners a perfect blend of traditional dishes and progressive, artistic cuisine. Reservations are required and can be made by calling 858-793-6460.

The menu includes a choice of:

Starters

Cold Smoked Trout and Beets: one of Chef’s most requested dishes with heirloom apples, whipped bleu cheese & toasted walnuts  

Wyoming Bison Tartare: egg yolk, “everything cracker,” shaved wild mushrooms, & red mustard frill

Organic Greens Salad: heirloom pears, Valdeon blue cheese, toasted pumpkin seed & red wine vinaigrette

Pumpkin Spice Soup: graham cracker crumble & warm maple drizzle

Still Smoking Scallops: another Kitchen 1540 favorite with tangerine dust, wild mushrooms, cauliflower-vanilla soup, smoked almonds & mache 

Entrees

King Salmon: black-eyed pea hummus, kale two ways, smoked ham hock & winter succotash

Slow-Cooked Free Range Turkey: thyme potato puree, confit thigh & sage stuffing

Beef Tenderloin: naturally feed & raised, horseradish potatoes with béarnaise, local vegetables

Duck Breast: mole negro, seasonal tamale, pickled nopales & tomatillo salsa

Vegetarian Ravioli: black butter, roasted chestnuts, parsley froth & winter truffles

Low ‘n’ Slow Baked Bread Pudding: The hotel’s best-selling menu item with bourbon toffee caramel, candied pecan crumble & apple butter ice cream

Crust-less Pumpkin Pie: vanilla Chantilly cream & orange caramel

Thanksgiving Spa Specials

Spa L’Auberge invites guests to celebrate Thanksgiving all month long with special prices on its treatments designed with the season in mind: Purifying Pumpkin Wrap and Hot Toddy Mani Pedi.

The Purifying Pumpkin Wrap is a deliciously, nutrient rich 50-minute treatment that provides instant radiance by deep cleansing the skin and improving uneven skin tones throughout the body. The treatment starts with a dry brush exfoliation all over the body, followed by the pumpkin mask application. The session concludes with a full body caramel moisturizing body milk application to leave the skin soft and supple. The treatment is priced a $115 (regularly $145) through November 31, 2014.

For more fall fun, guests can try the Hot Toddy Mani Pedi that starts with a foot and hand soak, followed by a warm, buttery, rum and brown sugar scrub to exfoliate hands and feet. A hydrating masque is applied to overworked heels, before an application of sweet cream moisturizer. This manicure pedicure is finished with the perfect fall polish of choice. The treatment is priced at $99.00 (regularly $110) through November 31, 2014.
